Duck eggs are a phenomenal treat. They generally have a bigger and richer yolk, a higher concentration of nutrients and more protein than the standard hen’s egg.
Try Tea Eggs!
Start with cold water and 6 Duck eggs in a large sauce pan. Bring to a boil, reduce heat and let simmer for 15 minutes.
Remove the eggs and crack the shells carefully with the back of a spoon (don’t remove the shells)
In the large sauce pan be sure you have enough water to cover about 1/3 of the way up on the eggs. Add your favorite black tea leaves , half cup of soy and orange zest.
Bring to a boil, reduce heat, cover and let steep for 6 to 8 hours turning the eggs occasionally.
